Badass Black Bean Brownies

If I told you I could spin delicious, chocolatey brownies out of mere beans and some ingredients you likely already have in your cabinet, I expect that you would look at me like that princess looked at Rumpelstiltskin when he claimed he could spin straw into gold.  I don’t blame you for your skepticism, but please close your jaw and listen up.  Your mind is about to be blown.  Black bean brownies.  Try them

Beans are one of those super versatile, cheap ingredients.  I don’t use them often, but I totally should.  They have a high volume of protein and fiber, which makes for easy digestion.  They regulate blood sugar, are heart-healthy, and are packed with vitamin B6.  Knowing all these things, I bought a bag of dry black beans, and there they sat in my cabinet, neglected.

I finally looked up interesting ways to use black beans, and I found mention of brownies.  After reading about 8 recipes, I created my own that is a solid balance of low calorie and high flavor.  What came out of my oven was greater than I ever could have imagined:  a 137 calorie brownie that has all the fudgy goodness even a non-weight watcher expects.

Black Bean Brownies


  • 1 1/2 cup black beans, soaked, rinsed, and drained
  • 1/2 cup quick oats
  • 1/2 cup maple syrup
  • 1/2 cup chocolate chips
  • 1/4 cup vegetable oil
  • 2 tpsp cocoa powder
  • 1/4 tsp salt
  • 3 packets Stevia
  • 1 tbsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp freshly grated nutmeg (if you don’t grate it fresh, don’t bother)
  • 1 tsp freshly grated cinnamon (if you don’t grate it fresh, don’t bother)
  • 1/2 tsp ground red pepper

Preheat oven to 350 degrees. Put all ingredients in a food processor or blender. Blend for around 1 minute. Divide the batter into 15 sections of a cupcake pan (prefereably a silicone one. Silicone bakeware will change your life.) Bake for 15 minutes in a fully preheated oven. Let brownies cool at least 10 minutes.
