Low Calorie Dessert Alert! Lifechanging Baked Pineapple

Confession:  I would sell my soul for all the pineapples in Hawaii.  There is a fabulous restaurant where I live called Carnaval Brazilian Grill.  Now, it is way too expensive, and waaaay too many calories for me to go there, but I kept thinking that I wouldn’t even need to go if I had their amazing pineapple recipe.  Well, I don’t claim to have replicated this recipe exactly, but I did come up with a pretty bitchin’ low calorie dessert recipe.

I will not pretend this is the healthiest recipe ever invented, however at 160 calories, it is a great alternative to grabbing cookies or cake or some other dessert.  Plus… if you taste it, you will never want cookies again. I swear. If you like pineapple and things that are delicious, this is the low calorie dessert that cannot be beat!

Ingredients

  • Del Monte Pineapple Spears (I get them from Sam’s Club.  They are around 2 inches thick.)
  • 1 tsp cinnamon
  • 1/8 cup brown sugar
  • The tiniest, tiniest bit of red pepper (optional if you want to suck)

Instructions

Preheat oven to 350 degrees.
Spread cinnamon and red pepper evenly along the bottom of a glass pan.  Set aside.
Slice the pineapple very, very thin.  Lay flat in the seasoned pan.
Sprinkle brown sugar evenly across the top of the pineapple.
Bake for 10 minutes.  Flip pineapple with fork.  Bake another 10 minutes.

Pineapple should be slightly browned at the edges.
